How do I get neccessary tax and income information from old employers if I cannot get in touch with them. Obviously I need to account for some income at an odd job I was doing a few months ago and have no way of getting in touch with my old boss. Please advise. Thanks!

You can call the IRS at 800-829-1040 to ask for assistance on handling missing W-2s or 1099s. You'll need to provide the IRS with all your personal info, as well as the employer's name, address, phone number, dates of employment, and an estimate of what you earned and what you had withheld.
Do you have a final pay stub from these employers? You can use this to come up with what you earned and your withholdings.
If you still don't have the required information from the employers by April 15th, you can file a Form 4852, which is a substitute for a missing W-2. Attach this to your return.
If you finally do get a W-2 after filing your return, and the amounts reported are different from what you reported, you may need to amend your return on a Form 1040X.
